
You guys. I just made 48 cookies out of TWO ripe bananas!
As you know, baking has become one of my favorite hobbies. Bored? Bake. Sad? Bake. Cravings? Bake!
Today was one of those days that just felt…blah. I needed something to keep my hands busy so I resorted to the beloved Pinterest. I was originally searching for some sort of chocolatey dessert, but really just wanted something simple.
I saw the two over-ripe bananas on my counter that were just begging to be used. So, I decided on some banana chocolate chip cookies.
As I’ve mentioned before, chocolate chip cookies are a classic family favorite. However, I find them boring to make. Instead of using eggs, I used our two ripe bananas to make a different kind of chocolate chip cookie.
For this recipe you’ll need: 1 stick of butter at room temperature, 1 cup brown sugar, 1/4 cup sugar, 2 very ripe bananas, 2 tsp vanilla, 2 cups flour, 1 tbsp cornstarch, 1 tsp baking soda, 1/2 tsp baking soda, 1/2 tsp salt, and 2 cups (1 bag) chocolate chips.
Make sure to preheat your oven to 375°. You’ll want to beat your brown sugar, sugar, and butter until light and fluffy. Then you’ll add in your bananas and vanilla.
In a separate bowl, whisk your flour, baking soda, baking powder, corn starch and salt. Slowly add this mixture into your banana mixture until well combined. Then add in your chocolate chips.
I baked these cookies for 10 minutes to start, and then added a couple minutes until they were golden brown on the edges.
This recipe made 48 cookies! I was shocked, and even more surprised at how delicious they are.
